28 Wilkie is a one-Michelin-starred Modern European restaurant headed by Chef de cuisine, Seth Lai. Located on the ground floor of a 1930s conservation building, the elegant restaurant showcases Chef Seth’s accomplished take on seasonal produce, in particular premium ingredients from Japan.

Established in 2017, 28Wilkie is the first The House of Louis XIII outside of France, and one of two Dom Pérignon Society in Singapore. Also within 28Wilkie is a stylish caviar bar, created in partnership with Singapore-founded Caviar Colony.

THE MANY FACES OF JAPANESE CUISINE

KOMA, a concept from Tao Group Hospitality, is a Japanese restaurant and sushi bar offering a modern interpretation of Japanese cuisine. Featuring innovative, original creations, KOMA takes a bold and distinct approach in its menu, incorporating fresh and seasonal produce and ingredients from Japan.


A MULTI-SENSORY JAPANESE DINING EXPERIENCE

Guests enter through a striking 20m passageway lined with orange arches, reminiscent of the Fushimi Inari Shrine in Kyoto, into an intimate lounge where one can experience creative new cocktails or choose from the venue’s extensive sake list. A dramatic 2.5m tall one-of-a-kind Japanese “bell,” which presides above a traditional Japanese foot bridge, provides a focal point for the main dining room, which is complemented by soaring high ceilings, an oversized sushi bar and a private dining room at the mezzanine. KOMA will present a next level dining experience where guests can enjoy great food and conversation in a dramatic, unique setting created by the world renowned design firm Rockwell Group.

Thevar is a modern Indian restaurant along the vibrant Keong Saik Street helmed by Chef Mano Thevar who showcases creative combinations of traditional Indian flavours. The menu reflects Chef Mano’s culinary training and travels.

“When you dine at THEVAR you will find that many dishes taste familiar, as they are representative of Indian flavours by way of the Malay Peninsula. Chef Sun Kim, Chef/Owner, leads Meta’s culinary team, featuring menus that showcase innovative and well-balanced dishes based on his Korean heritage, travels and culinary experiences.

Originally born in Busan, Korea, which is famous for its beaches and seafood, Chef Sun moved to Seoul at a young age where he was exposed to the F&B business. His mother was a restaurateur and this early experience cultivated his love for food.

His role as chef is a culmination of a decade of experience, starting from working at Italian restaurants, and French culinary training in Sydney. He also cites time learning Japanese techniques under a Japanese chef, which was essential to shaping how he now helms the kitchen at Meta.

Marrying his Korean heritage, Japanese culinary touches, and Western culinary training, Meta is exemplary of Chef Sun’s East-meets-West philosophy, incorporating a myriad of seasonal produce and indigenous ingredients. In 2017, the team received their first Michelin star and retained their star in 2018 and 2019.

In 2021, Meta was named as the “American Express One To Watch” as part of Asia’s 50 Best restaurant and in 2022 gained a ranking of 20th Best Restaurant in Asia.

Chef Jonathan Koh, Singapore born and raised – Initially started out as a Patisserie, was transformed into a full-fledge restaurant after one year of opening.

A as the name suggest,Chef Jonathan takes inspiration of the food he serves up at Voyage firstly from his time working in France, culinary travels, and in produce sourcing and discovering. “My idea of Voyage with its casual atmosphere, relaxed feeling where my guests are meant come together, have a meal – best shared around the table. Alain Gras has been working passionately, with great respect of the land since 1979 when he took over the running of the domaine. His efforts quickly established itself as the standard bearer for the wines in particularly coming out from the village of Saint-Romain. An exceptional terroir being on top of a hill, which is at 1,300 feet above sea level as well as it benefits from a limestone-clay soil that forces the vine roots to descend deep into the bedrock to obtain the nutrients they need.The typicity of the soil in Saint Romain gives minerality, elegance and freshness to its grapes. The domaine today stands at 15 hectares in total where Alain has vines at 1,050 feet in Auxey-Duresses and in Les Tillets, one of Meursault’s highest lieux-dits.

Alain Gras’s wines are listed in most of France’s Michelin three-star restaurants. This is down to his own sheer determination, and his friendship with the late master chef, Bernard Loiseau, of Saulieu.

Arthur, Alain’s son has recently joined in the running of this domaine. His continued quest in making his wines a reference point for all of Burgundy.
