LE BRUN DE NEUVILLE
By Nova Cellar Selection
A house that predominately vinifies Chardonnays, a grape variety that is particularly valued in Champagne for its finesse and floral nuances.
At the helm of Le Brun de Neuville are people who know their craft. Damien Champy, who has helmed the office of president since 2008, Cyril Delannoy, an experience cellar master, a dedicated team combine with their knowledge and passion, set out to produce exceptional wines. The Champagnes then are given time to mature in the deep cellars of the house. The aging of these Champagne wines is a continuous process that begins after alcoholic and malolactic fermentation in barrels. After, a further aging in bottles while in contact with the yeast. Bottles rest in 15 meters underground in a cold constant temperature of 14 degrees Celsius.
At Le Brun de Neuville, Champagnes are given time to rest for at least 48 months prior to their release. This patience and care are one factor that gives it Champagne their excellent reputation.
