Adeline Houillon as a child, she and her father and brother Emmanuel went to the neighboring Jura to buy wine. Her father had a particular fondness for the wines of a certain Pierre Overnoy and had his regular customer for decades. When his son Manu didn't immediately know what to do after school, his father organized an internship for him at Overnoy. Manu was immediately enthusiastic and Pierre, who has no children of his own, enjoyed sharing his extensive knowledge of wine. One thing led to another. Manu stayed at the Maison Overnoy in Pupillin. Today has the reins of this legendary winery. Together with Pierre, he produces some of the most sought-after wines in the Jura.
His sister also regularly helped out at Overnoy's. First, however, she attended the hotel management school in Besançon where she met her future husband, Renaud Bruyére. A trained chef originally from Tain l'Hermitage. In 2004, the two decided to buy a house in Pupillin and move their lives there. Renaud, who had always had a strong passion for wine, gave up his job as a chef and took a job as field manager for Stéphane Tissot in 2007. When Tissot offered him a plot in the Les Tourillons area in one of the highest vineyards in Arbois in 2011, Renaud didn't have to think twice and accepted the offer.
Manu and Pierre provide the two with close advice on the vinification of the wines. In the early years, the Domaine's barrel cellar was located directly beneath the family home and thus in the house directly next door to Maison Overnoy. At the end of 2015, Renaud was able to rent a larger cellar in the immediate vicinity and growing the business. The close cooperation between the two houses continues unchanged.
The Domaine's wines are always bottled without filtration, fining, enzyme treatment or other manipulative interventions. The addition of SO2 is also avoided during the entire vinification process and before bottling. Adeline and Renaud produce lively wines in the best sense of the word. The energy and freshness of the wines is remarkable. They do not try to conform to any trend, but rather to reflect the very own character of the terroir and grape variety as authentically as possible. Their wines are timeless. And that puts them very close to Pierre.
